Baked (GF) Donuts
Baked Donuts
You can bake gluten-free doughnuts in a donut pan or mold. Using this method makes for the correct shape of a doughnut. The finished doughnuts are easy to glaze and decorate. To get that crispy golden donut, heat a quart of oil in a dutch oven or other deep pot.
Ingredients
2-½ cups gluten-free all-purpose flour blend
1 cup Lakanto Monk Fruit sugar
2 ½ teaspoons baking powder
¼ teaspoon salt
3/4 cup water
3 eggs
1 tablespoon vanilla
2/3 cup canola oil, plus more for frying
Vanilla Glaze
1 cup Swerve confectioners’ sugar
1 teaspoon vanilla
Dash salt
2 tablespoons water
Directions
Step 1: Make the doughnut batter
Combine dry ingredients in a large bowl. Using a stand mixer or hand mixer, slowly mix in water, eggs, vanilla and oil. Once all ingredients are incorporated, slowly raise mixer to medium-high speed, then mix for 2-3 minutes until light and fluffy. Allow the batter to rest for at least 15 minutes.
Step 2: Preheat the oven and fryer
For baking doughnuts, increase temperature to 400° F to increase crisping of the donut. While baking the donuts, heat oil to 350° F over medium-high heat. Insert thermometer to maintain consistent heat.
Step 3: Shape the doughnuts
After 15 minutes, pour or pipe batter into donut molds.
Step 4: Bake the doughnuts
For baking only, bake 10-12 minutes until set and crisped on the edges. Let cool for 2-3 minutes, then invert onto a baking sheet and turn up the heat to crisp.
Step 5: Make the glaze
While donuts are cooling, mix together all glaze ingredients.
Step 6: Decorate the doughnuts
You can drizzle or pour glaze over the cooled doughnuts, or dunk the donuts in glaze. Then, add other fun ingredients while the glaze is still wet, such as sprinkles, fruit, nuts, chopped gluten-free cookies or candy pieces!
If dunking the donuts into glaze: Pour glaze into a wide, shallow bowl, and place each donut directly into glaze. Let sit for 15-20 seconds, then rotate donut while lifting it out of the glaze to get that smooth doughnut shop finish.
If Vanilla is too boring for you... here's some ideas for other flavors:
chocolate donuts, add ½ cup cocoa powder to the batter.
birthday cake donuts, stir ½ cup of your favorite sprinkles into the batter before baking.
maple glaze instead of vanilla glaze by using 2 tablespoons pure maple syrup, ½ cup Swerve confectioners sugar, a dash of salt and ¼ teaspoon vanilla. Top your maple donuts with cooked crumbled bacon for an incredible flavor burst.
